I am a mom in my mid-thirties. I have always had issues with gluten and processed food, but I didn’t give it a whole lot of thought until I hit 30. At that point, I was dealing with some minor health issues that just wouldn’t go away, and going gluten free turned out to be even bigger for my health than I thought it would. A few years later, I gained a lot of weight when I was laid off and unemployed for a few years. Though I remained gluten free, I continued to eat a lot of processed and sugary foods, and it started showing up on my waistline.
In early 2012, I took on a challenge to go “paleo” over Lent. I’m not exactly religious, but it seemed like a time frame that everyone gives something up, and it was a fixed period of time. I kept telling myself, “I can do anything for a month”. And I did. I ended up losing 20 pounds!
